Sunrise & Salmon

Good morning Foodies!
Today I definitely wanted something hearty for my breakfast. I woke up starving!

On Mondays, I usually spend my day getting my blog prepared for the week and completing some work for my classes. I try my best to my Mondays my catch-up day where I get my work today (and get myself together). I wake up around 8:30AM, do a quick yoga video, and make my breakfast. I had enough sausage and eggs in the fridge, but I also had some leftover salmon that I made last week. I thought about making salmon cakes and they came out great! If you’re looking for a hearty breakfast to start off your week — give this recipe a try!!



What You'll Need:

  • 2 Salmon Filets

  • Olive oil

  • Salt and black pepper

  • 1/4 cup minced fresh flat-leaf parsley

  • 1 cup Italian breadcrumbs

  • 1/2 cup Dukes mayonnaise

  • 2 extra-large eggs, lightly beaten

Instructions:

  1. Drain liquid from your salmon. In a mixing bowl, beat the eggs and add the diced onion, salmon and seasonings.

  2. Mix thoroughly.

  3. Make into patties.

  4. In a frying pan, heat olive oil. Place patties in pan. Brown on each side (about 5 minutes) , turning gently. Drain on paper towels, serve, and enjoy!
